15 days of contact with the peels, daily remontages.

Malolactic fermentation in second passage frenchoak barriques for 18 months, in 2000 bottles from August 2021 degrees are 14.6°.

Dark and dense in colour, this is a wine full of power and concentration. Black fruit is lifted by persistent foral perfume of violet and liquorice. All its richness is embraced by soft, elegant energy. Long and linear, this wine will evolve and age gracefully. Match with fat cured meats, not spicy cheeses.

Serve at 16°|18°.
